Make your own (kinda naughty but not really) choc drops!

(Not because it’s Easter, because we’re unashamed chocoholics. Aren’t you?)

Yep. We did!

Our recommendation is to hoard them under your pillow & allow each one to melt slowly on the tongue – quickly hiding the plate & looking busy if anyone should enter the room.

Ingredients:

1 cup of Cocoa Butter 

1 cup of Organic Raw Cacao OR dutch-pressed Cocoa powder

½ cup Raw Honey or to taste – using half this amount or less will make a bittersweet chocolate

1 teaspoon of Real Vanilla Powder or other flavors to taste

Pinch of Himalayan or sea salt (this is also excellent sprinkled over the finished product for a salted-chocolate experience!)

Optional: Roasted macadamia nuts, orange zest, shredded coconut 

(We didn’t mean to make them look like nipples. It just happened!)

Method:  

Melt cocoa butter in a double boiler or a glass bowl on top of a small pan with an inch of water (make sure water isn’t touching bowl) over medium heat.

When cocoa butter is completely melted, remove from heat and add cocoa powder, honey, vanilla and other flavor extracts.

Make sure all ingredients are well incorporated and smooth. (Be careful that no water or liquid gets in to the chocolate as it can cause it to clump! Be aware even of wet hands or a drop of water splashing in the bowl!) [Note: You can also just melt all of this on very low heat in a small pan and not have a problem, but this isn’t as reliable as the double boiler method]

Grab a spoon and dollop a circle onto a pan lined with baking paper, or a flat surface that you can easily whack in the fridge. Add toppings such as macadamia nuts, orange zest, shredded coconut while it’s still soft.

Let harden for several hours at room temperature or stick in the fridge to harden more quickly. Will store for over a week at room temperature or can be kept refrigerated for longer.
