Clarity Recipe: Breakfast Burritos
Burritos for brekky?? ABSOLUTELY! These guys are the bomb, with protein, good fats & fermented veggies to make a great start…actually, the ULTIMATE start to your day! Feel free to vary the fillings: tempeh, Mexibeans, leftover roast chook, guac, salsa, whatever floats your boat. These burritos are super easy & quick to make, particularly if you have all the fillings prepped beforehand – totally doable for a substantial breakfast on a busy morning. After all, it’s during those busy times, especially, that we need to provide our bodies with the best fuel!

Breakfast Burritos
Time: 5 minutes
Makes: 1 flatbread
What you need:
3 tablespoons arrowroot flour
2 tablespoons water
1 tablespoon coconut flour
1x egg
1 tablespoon olive oil
pinch salt
ghee (or cooking oil of your choice)
Fillings:
Sliced avocado, scrambled eggs with turmeric, fermented veggies (make your own or check out the awesome Superkrauts from Peace, Love & Vegetables), homemade mayo.
* feel free to add/omit whatever you like to fill these bad boys with
How to make:
Add the arrowroot four, coconut flour, egg, olive oil & pinch of salt to a large mixing bowl. Whisk together until you have a smooth batter.
Heat the ghee in a medium sized frypan. Add the batter to the hot pan & heat until golden brown. Flip & cook on the other side.
