Recipe: Double Cheese & Cauliflower Patties

With the New Year well underway, you may find yourself in 2020 planning mode. If meal prepping is part of your planning, you’ll perhaps be looking for some new easy lunchbox-friendly recipes to add to your repertoire – look no further than these tasty bad boys! (Did we mention they contain TWO types of cheese??) Enjoy!

 

Time: 45 minutes

Makes: 10-12 patties

 

 

What you need:

1/2 cauliflower

1 cup grated vintage cheddar

1/2 cup grated parmesan

2 eggs

1 onion, sliced

2 cloves garlic, crushed

1 tablespoon curry power

2 tablespoons coconut flour

olive oil

salt + pepper to taste

 

What to do:

1 / Preheat oven to 180°C.

2 / Remove the cauliflower stalks + roughly chop the florets. Add to a food processor. Pulse the cauliflower until a rice like consistency is achieved. Transfer to a large mixing bowl.

3 / Heat oil in a large saucepan over a medium heat + cook the onions + garlic for a few minutes. Add curry powder + cook for an additional 30 seconds, until fragrant.

4 / Add the onion + garlic mixture, cheeses, eggs + coconut flour to the riced cauliflower. Add salt + pepper to taste + stir to combine.

5 / Line a large baking tray with parchment paper. Form vegetable mixture into small flat patties (use about 2 tablespoons of mixture per patty). Place evenly on a baking tray + press down lightly with your fingers or the back of a fork.

6 / Cook patties for 20 minutes on one side, then gently flip over + cook for about 5-6 minutes on the other side. They should be firm + lightly golden brown.

7 / Serve fresh from the oven with salad. You can store these in an airtight container in the fridge for up to four days.
