Recipe: Brazilian Bliss Balls!
This is a super simpleĀ bliss ball recipe… that’s a cut above your usual dried fruit ‘n’ nut fare! Why? CACAO BUTTER! This not only does this magical ingredient impart a rich chocolately flavour, but it gives these balls a beaut texture, similar to that of a chocolate truffle. Make a double batch & freeze half… or bring them along to your next picnic & be the most popular person in your party. Mmm!
Time: 15 minutes + refrigeration time
Makes: 10 – 12 balls
What you need:
1 cup cacao powder
1 cup cacao butter
1 cup sulphur-free raisins (I used sun muscat)
1 cup brazil nuts (+ 1/4 cup to roll balls in)
1 teaspoon vanilla extract
honey – to taste
pinch good quality salt
What to do:
1/ Set up a double boiler & melt down cacao butter.
2/ Blitz 1/4 cup of the brazil nuts in a food processor, until coarsely chopped. Put aside in a small bowl.
3/ Put the remainingĀ brazil nuts into the food processor & blitz until they resemble fine bread crumbs.
4/ Add the cacao powder, melted cacao butter, raisins, vanilla, honey & salt to the processor & blitz for 30 seconds, or until ingredients are well combined.
5/ Pour the mixture into a bowl. Take a tablespoon or two of mixture into your hands at a time & roll into small balls. If the mixture is too runny, allow it to set slightly in the fridge. Don’t leave it for too long though – otherwise the mixture will be too firm & you won’t be able to roll it!
6/ Coat balls in the 1/4 cup coarsely chopped brazil nuts.
7/ Store in a sealed container in the fridge. Enjoy!
