Warming Winter Tonic
Cold, much? This cool snap has got us reaching for our hot water bottles & snuggly slippers. Good thing the wonderful Caro of @power_acupuncture has this super easy (& super warming!) drink to share with us today! Thanks, Caro! ?
– 1L coconut water
– 1.5 inch bit of ginger, finely sliced
– 1 stick of lemongrass, slightly bruised
– 10gms of coriander stems (if you don’t like coriander then omit)
– 10gms thai basil (or normal basil)
– 1/2 red chilli (optional if you don’t like too much heat)

Put all the ingredients into a pot, except the basil and coriander, and simmer for 40 mins. Then add the basil and coriander and simmer for a further 20 minutes. Cool, drain and refrigerate. All you need is a 25ml shot a day.

You can also vary this recipe. If I have fresh turmeric in the fridge I’ll add in some slices of that, and sometimes a teaspoon of tamarind paste. If you have a sweeter palate you can always add in a couple of teaspoons of honey. ENJOY, be healthy and stay safe xxx

P.S. If you have a fever or suffer from night sweats this recipe may not be the best of for you. Maybe try infusing the coconut water in peppermint leaves and chrysanthemum tea instead.
