Winter Warmer Recipe: Zucchini & Corn Fritters

 

frittersLove a good fritter! Quick, easy + tasty…. plus leftovers make great additions to your lunchbox. Gluten free folk, I’m sure you could make a GF version of this, subbing in a flour of your choice. If you try it, let me know – would love to hear how it turned out!

Makes: 10 fritters | Preparation time: 15 minutes | Cooking time: 20 minutes

What you need:

3 large zucchini, shredded

2 cups corn kernels (fresh or frozen)

3 spring onions, sliced (green leaves included)

4 cloves garlic, crushed

2 cups SR flour

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon salt + pepper

What to do:

1. Combine all ingredients in a large bowl. Use your hands to mix everything together. Let mixture rest for 10 minutes, to allow the flour to absorb the moisture of the zucchini. Mould batter into 10 patties.

2. Heat a large non-stick pan over medium heat. Grease with olive oil + cook patties (4 or 5 at a time, depending on how large your pan is) for about 5 minutes on each side, or until golden brown.

3. Serve with avocado + salsa.
